Inspector notes: Food contact surfaces of equipment/utensils (can opener, slicer, and ice machine) were observed with an accumulation of food debris and bio-film. The food contact surfaces of equipment must be clean to sight and touch. PIC turned off ice machines. Ice was voluntarily disposed of. Can opener was placed in 3-bay. Slicer was taken apart to be fully sanitized. PIC to go over with all staff proper sanitizing procedures.

Inspector notes: At the time of inspection, the high temp. dish machine was tested using a thermo-label sticker. The sticker was observed to change for proper temperature during the sanitizing cycle, but the flow pressure of the fresh hot water sanitizing rinse (PSI) was not between 15-25 PSI as required (observed at 10 PSI). Unit is to be serviced/adjusted.
