Inspector notes: At the time of inspection, chicken items in the walk-in cooler, which were prepared in advance previous day, were not cooled to 70 degrees Fahrenheit in 2 hours and then to 41 degrees Fahrenheit within 4 hours. Chicken was observed at 49 and 54 degrees Fahrenheit. Chicken was voluntarily disposed of at the time of inspection.

Per interview of PIC, Chicken was placed hot in the refrigerator and densely packed in stacked, covered containers. When placed in cooling or cold holding EQUIPMENT, FOOD containers in which FOOD is being cooled shall be arranged in the EQUIPMENT to provide maximum heat transfer through the container walls and loosely covered, or uncovered if protected from overhead contamination. Cooling strategies and information were left with the PIC at the time of inspection.
