Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Based on time and temperature, food items were moved to colder refrigeration at the time of inspection.

Foods are to be cooled properly prior to placement in cookline prep units for food service. - Rice Noodles were observed cooling in a large metal bowl covered with plastic wrap. Foods are to be cooled in shallow containers and left uncovered for rapid cooling is contamination of the uncovered foods can be prevented. Cooling strategies were discussed with the PIC at the time of inspection.
