The physical facilities shall be cleaned as often as necessary to keep them clean and to aid in the current pest control program. (Employees began cleaning at the time of inspection.)

Time/temperature control for safety (TCS) food that is cooked, cooled, and reheated for hot holding must be reheated to 165 degrees Fahrenheit or above for 15 seconds. Food was moved to stove top to be rapidly reheated. Proper reheating procedures reviewed with PIC.
