Also, cut tomatoes (44-45F - Cold Holding); shredded cheddar cheese (45F - Cold Holding in walk-in-cooler. Operator stated employee may have left walk-in-cooler door opened. Operator stated she will ensure door stays closed for foods to chill Also, bleu cheese crumbles (45F - Cold Holding) in top of ale station on both sides of kitchen. Employee stated bleu cheese was placed in sandwich station at start of lunch. Operator removed cheese to place in nearby cooler to.
