Turkey was uncovered and placed into the freezer for rapid cooling. - Ground Taco Meat was observed cooling in the 2 Door Reach-In Cooler in a covered pan at 63 degrees Fahrenheit. Food to be uncovered to allow for rapid cooling. Food items are allowed to be left loosely covered or uncovered if protected from overhead contamination.
