Except when combined as ingredients, different types of raw animal foods must be separated from each other during storage by using separate equipment or arranging each type of food in equipment so that cross contamination of one type with another is prevented. Foods were rearranged for proper storage at the time of inspection.

Use of the refrigerator is to be discontinued until properly maintaining ambient temperature of 41 degrees Fahrenheit or below for cold holding of TCS foods. - The kitchen dish machine was observed in need of an adjustment to the sanitizer chemical flow (observed at 25ppm). Equipment/utensils are to be sanitized in the 3-bay sink until unit is properly supplying sanitizer for the sanitizing cycle (50-100ppm). (Repair Technician on site by end of inspection for repairs.)
