The following was observed: 1) Chowder was placed hot in the refrigerator in containers greater than four inches deep. 2) Sandwiches and salads assembled on-site were not cooled down to 41 degrees Fahrenheit. Items were placed into single service containers and placed into the grab and go refrigerator unit. Chowder was moved to a shallow pan to properly cool. Sandwiches and salads moved into the walk-in cooler with the lids off to properly cool.
