Inspector notes: Rice and mac and cheese was observed held at 118-120 degrees Fahrenheit in the 2-door hot holding unit. The ambient temperature of the hot-holding unit was observed at 113 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Per PIC, foods were stored in the unit over 3.5 hours prior to inspection. Person in charge voluntarily disposed of item. A chicken patty was observed to be 120 in the hot-holding unit above the refrigeration prep unit. PIC elected to voluntarily dispose of item at the time of inspection.
