Inspector notes: Roasted pork loin was observed held at 124 degrees Fahrenheit in a Cambro unit prior to delivery to Charlie Unit. Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Pork loin was placed into Cambro unit less than 2 hours prior to inspection. Pork loin was placed back into oven and reheated to an internal temperature of 165 degrees Fahrenheit.
