Inspector notes: The quaternary ammonium concentration in the sanitizing solution of the 3-bay sink was 0 parts per million (ppm). According to the manufacturer's use directions, the concentration of the quaternary ammonium must be 200 ppm. Sanitizer container was observed empty and needed to be replaced and establishment does not have replacement sanitizer. Sanitizing sink was prepared with chlorine bleach to 100ppm and inspector left test strips for staff. Establishment is to order more sanitizer.

Inspector notes: The deli display case was observed held at an ambient temperature of 45 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Food items within unit had been placed into unit less than 4 hours prior to inspection and were moved to freezer to rapidly cool and then will be held in 2-door reach-in unit in back storage area. Establishment is not to store TCS foods inside of unit until an ambient temperature of 41 degrees Fahrenheit or less is maintained.
