Per interview of staff, corn salsa (cooked corn and beans mixed with salsa) was placed hot in the 2 door reach-in refrigerator in a plastic wrap covered container. Per the PIC, the corn salsa is intended for same day lunch service. To ensure proper cooling and cold holding at time of service, salsa was loosely covered and placed in the walk-in freezer to rapidly cool.
