Based on temperature observed, chowder was voluntarily disposed of at the time of inspection. Proper cooling time and temperature, and strategies were discussed at the time of inspection.

Inspector notes: At the time of inspection, Pico de Gallo and Mango Salsa were observed cold held in an ice bath at 45 and 48 degrees Fahrenheit respectively. Per the PIC, the Pico de Gallo and the Mango Salsa were recently placed into the ice bath from cold refrigeration. At the time of inspection, the ice bath was observed to be insufficient to maintain proper cold holding temperature of 41 degrees Fahrenheit or below. PIC was instructed to use a larger pan with extra water and ice for a proper "Ice Slurry".
