Inspector notes: Various calzones and meat pies were observed not cooled to 70 degrees Fahrenheit in 2 hours and then to 41 degrees Fahrenheit within 4 hours. -Eggplant calzones were observed at 49-50 degrees Fahrenheit. Per interview of staff, eggplant calzones were prepared 1 day prior to this inspection. -Proper cooling methods reviewed. Staff voluntarily disposed of the eggplant calzone during this inspection. -The other calzones and pies were prepared earlier today and were moved to the freezer to rapidly cool during this inspection. -Establishment shall continue with the cooling log for foods in the cooling process. -Cooling log must be completed and provided to inspector upon the next re-inspection date.
