Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Per interview of staff, potatoes was placed hot in the refrigerator in containers greater than four inches deep. Potatoes had only been cooked less then 2 hours prior potatoes were tempted at 68DF. Potatoes were spread onto a backing sheet one layer high and placed in refrigerator.

Inspector notes: Cooked food items was observed held at 45 degrees Fahrenheit. Unit was holding an ambient of 46 Degrees F. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Food items were voluntarily disposed of. Produce and non tcs food items were moved to working unit.
