Inspector notes: Various food was observed held at between 42-47 degrees Fahrenheit in the walk-in cooler and prep unit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Ambient of prep unit was observed fluctuating between 44-47 DF. All food in unit, other than turkey, was moved to properly functioning refrigeration at the time of inspection. Turkey was observed at 47 DF and voluntarily disposed of at the time of inspection. Cheese, chicken, and dressings were observed between 43-45 DF in the walk-in cooler. Walk-in cooler thermostat was turned down and observed holding an ambient temperature of 37 DF at the time of inspection. Establishment is to monitor the internal food temperature of the food in walk-in cooler. Per PIC, service will be called.
