Inspector notes: Walk-in cooler was observed held at 45 degrees Fahrenheit. Deli display cooler was observed at 46 DF. The 1 door reach-in was observed at 75 DF. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. PIC turned the walk-in cooler dial down, walk-in cooler got down to 40DF. All food in units were evaluated and either voluntarily disposed of or moved to the walk-in cooler at the time of inspection. Establishment is not to store any TCS foods in the deli display case or 1 door reach-in until they are able to hold an ambient temperature of 41 DF or less. Per PIC, service will be called today.
