Inspector notes: Observed window cleaner stored above cleaned dishes and floor cleaner next to containers of fryer oil. Observed various employee medicines and lotions stored on the counter above bowls used to stage customer orders. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection

Inspector notes: Observed wing dressing buckets and tongs from yesterday in use at the sauce station next to the fryers. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection

Inspector notes: Observed cooked potato skins, housemade ranch dressing and cooked chicken wings prepared more than 24 hours prior without date marks. PIC stated the wings were cooked 9/28-9/29 before freezing, and the ranch and potato skins were cooked 9/29. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)

Inspector notes: Observed various employee foods stored above foods intended for service to customers. PIC moved employee consumables to the designated area and will retrain on proper eating, drinking, and tobacco use. To ensure food safety, prevent physical contamination and the transmission of disease; employee eating, drinking, beverage storage, and using tobacco must be done in an approved area

Inspector notes: Provide splash guards to the newly installed handwash sink located near the three sink

Inspector notes: Observed 30+ boxes of cooked chicken wings stored directly in waxed cardboard boxes previously used to store raw chicken wings. Observed 10+ empty boxes stored at room temp near the mop sink. Advised PIC these boxes are intended for single use only and may pose a risk of cross contaminating RTE wings with areas where raw meats and juices touched. PIC stated plastic bins were purchased but the freezing temperature caused cracking. Advised PIC utilize metal containers. Establishment fries chicken wings a second time prior to service to customers. PIC moved the RTE chicken to as many food grade containers as were possible and stated food grade containers would be purchased ASAP
