PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection

Inspector notes: Observed cooked potato skins, housemade ranch dressing and cooked chicken wings prepared more than 24 hours prior without date marks. PIC stated the wings were cooked 9/28-9/29 before freezing, and the ranch and potato skins were cooked 9/29. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)

Observed 10+ empty boxes stored at room temp near the mop sink. Advised PIC these boxes are intended for single use only and may pose a risk of cross contaminating RTE wings with areas where raw meats and juices touched. PIC stated plastic bins were purchased but the freezing temperature caused cracking. Advised PIC utilize metal containers. Establishment fries chicken wings a second time prior to service to customers. PIC moved the RTE chicken to as many food grade containers as were possible and stated food grade containers would be purchased ASAP
