Acceptable chlorine concentration shall measure between 50-100 PPM. Establishment will utilize the three-compartment sink or dish machines in the kitchen to wash, rinse, and sanitize equipment, utensils, and food contact surfaces until the dish machine is repaired and maintains a chlorine concentration between 50-100 PPM. Observed ice buildup in the back of the beverage reach in refrigerator. Non-TCS foods such as citrus and bottled beverages like champagne and lemonade observed in the refrigerator. Ensure equipment is maintained in in a state of good repair and condition
