Person in charge opted to discard product rather than rapidly cool. Please ensure food items are cooled in shallow, uncovered containers, or in ice baths until they reach 70 degrees F from 135 degrees F in no more than 2 hours, and down to 41 degrees F in no more than a total of 6 hours
