Inspector notes: Observed standing sewage on the sunken floor sink in the back room with the 3 comp sink and ice machine. Per PIC, the drain has collapsed and is awaiting review from their insurance claim. PIC stated the establishment is currently under remodel (see RM-11094) and work on the remodel was halted upon in-ground sewage pipes began collapsing when being scoped. PIC stated the drain services the back hand sink, ice machine, and mop sink. A different drain line services the food production area (where plumbing lines have been trenched, covered with plywood and are non-functioning). PIC stated the 3 comp sink is on working drain line. PIC stated the standing water is periodically wet-vacuumed and dumped outside behind the establishment. Observed a manual non-plumbed hand sink in use in the food production with a bucket in use to collect wastewater. PIC stated this water is also disposed of in the area behind the establishment. Discussed that conveying sewage is an imminent health hazard. Establishment observed in operation at the time of inspection. Observed an employee wash hands at the temporary hand sink, scoop ice, then pour a 2 liter bottle into a pitcher for immediate service to customers. Establishment is currently serving their full menu. Discussed that the establishment does not meet the minimum requirements for operation and cannot remain open with sewage backup or stuck drains. A re-inspection will be conducted upon repairing the drain line so that all plumbing fixtures can function normally. Provided PIC with cleanup procedure for vomit and fecal events. Ensure all flooring is properly cleaned and disinfected prior to re-inspection. Advised PIC to disinfect outdoors areas used to dispose of graywater/sewage using a powdered disinfectant such as granular lime
