Inspector notes: Observed dishes in the 3 comp sink being sanitized in a solution containing 0ppm quat sanitizer when measured with a chemical test strip. Observed the wash and sanitize compartments being filled simultaneously from the chemical dispenser. Observed low water pressure and a leak when filling both compartments at the same time. After turning on only the sanitizer dispenser, observed quat bubbles dispensing. Observed a maximum quat concentration of 100ppm when measured with a chemical test strip. Food-contact surfaces must be properly sanitized after washing and rinsing (150-400ppm quat per manufacturers label.) Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized in the dishwasher at time of inspection. PIC placed a work order on the dispenser at the time of inspection

Inspector notes: Observed the 3 comp sink drain line and 2 hub drain lines stored below the flood rim of the floor sinks. Observed flexible tubing inserted into the cavity of the hub drain. Drain lines must be trimmed 1" above the floor rim of the serving floor sink. Must repair all plumbing to a state of good repair prior to next routine inspection
