Per person in charge (PIC), TCS beef is rendered into a shelf stable Non-TCS beef jerky to be held at room temperature and sold over multiple days. A variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyazenergovweb.tylerhost.net/apps/selfservice#/home. Additional resources can be found at https://www.maricopa.gov/3978/Food-Variances. Beef-jerky made through specialized process was embargoed and recommended for discard.
