Inspector notes: Observed 50°F internal temperature, per probe thermometer, of diced tomatoes and shredded cheese in top compartment of prep cooler. Per Person in Charge (PIC), diced tomatoes and shredded cheese were prepared at room temperature and then placed into prep cooler two hours prior to inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC moved containers of shredded cheese and diced tomatoes to walk-in cooler to rapidly cool at time of inspection
