Acceptable chlorine concentration shall measure between 50-100 PPM. After running the dish machine a second time, the chlorine concentration measured at 0 PPM. After priming the sanitizer and running the dish machine for a 3rd time, the chlorine concentration measured at 50 PPM. Discussed utilizing test strips regularly and before use of the dish machine to verify the chlorine sanitizer maintains a concentration of 50-100 PPM on final rinse food contact surfaces

After draining, priming, and running the dish machine additional times the chlorine concentration measured at 0 PPM each time. Service call made a time of inspection. Observed repair technician onsite conducting repairs prior to the end of the inspection. Acceptable chlorine concentration shall measure between 50-100 PPM. Establishment will utilize the three compartment sink to sanitize food contact surfaces until the dish machine is repaired and maintains a concentration of 50-100 PPM on final rinse food contact surfaces

Inspector notes: At the mop sink, observed faucet equipped with an AVB and a Y-valve attached supplying water to a chemical dispenser. Installing a Y-valve, similar downstream shut-off device, or obstruction places back pressure on the AVB. Both sides of a Y-valve connected to a sink for a chemical dispenser are pressurized; one side supplying water to the chemical feeder and the other side to the shut-off valve on the Y-valve, or to a hose attached. Since, AVB’s could be kept on under constant pressure at all times, they will fail under such installations. When the faucet is used with a hose on the open side of a Y-valve, there is now a potential cross-connection hazard. Chemical dispensers must be connected to a dedicated water supply.
