Items of jewelry such as rings, bracelets, and watches may collect soil and the construction of the jewelry may hinder routine cleaning. After discussion with the owner it was determined establishment utilizes 4 hour Time as a Public Health Control (TPHC) to monitor cheesecake bites. If utilizing 4 hours and no temperature control, the food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control. No discard time observed. According to the person in charge the cheesecake bites were removed from temperature control at 11:00 AM
