Inspector notes: Observed 100°F internal temperature of birria in two containers on prep table behind cookline. Per person in charge (PIC), birria was cooked at 2am day of inspection and then immediately set on the table to cool down prior to storage in walk-in cooler. Per PIC, no temperature checks were conducted while birria was being stored on prep table. Cooked TCS foods shall be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Birria improperly cooled was discarded by PIC at time of inspection

Person in Charge (PIC) stated the cooked chicken was cooked at 1am on the day of inspection, then placed on counter to cool down before being placed into bottom storage of prep cooler. Other cooked TCS food items in same storage area of prep cooler were measured at or below 41°F, per probe thermometer. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. PIC voluntarily discarded 71°F cooked chicken
