Inspector notes: Employee was cleaning equipment and utensils in three compartment sink in the back of the kitchen with a sanitizer concentration >400ppm. Sanitizer solution of quaternary ammonium per mfg should measure between 200-400ppm. PIC adjusted the dial on the sanitizer dispenser and adjusted concentration so it was between 200-400ppm. PIC adjusted concentration of quat to measure 200-400ppm. PIC remade buckets of sanitizer solution and sanitized the equipment again in correct sanitizer concentration. Ensure all food contact surfaces are sanitized with a concentration of quat indicated by the manufacture's guidelines
