Inspector notes: Observed cooked black beans/60°F in the uncovered upper portion of the prep cooler across from the fryer. Observed cooked shrimp/47°F in the uncovered upper portion of the charcuterie prep cooler. After discussion with the chef, it was determined all foods were still cooling and were prepared 20-30 minutes prior. Discussed that prep coolers are not designed for cooling foods and are intended to hold previously cooled foods (41°F or less). Since all foods had been cooling for fewer than 2 hours, all TCS foods were moved to the blast chiller to rapidly cool
