Tuna, chicken, turkey, cheese tomato were between 45°F and 55°F. Corrective action (CA) All TCS (time/temperature control for safety) foods shall be 41°F or below. The person in charge was informed to make sure the tomatoes and lettuce were properly cooled in the walk-in cooler before being stored at the front service make table. Corrected on site (COS): tuna chicken, and turkey were discarded.
