Inspector notes: Observed clean oven food racks sitting on floor beside ovens. All food Equipment needs to be store 6 inches off the floor. COS PIC placed oven racks in 3 compartment sink to be cleaned and asked if she could keep them on the second food prep shelve for storage. EHS stated yes.

Inspector notes: Walk in Cold Hold Unit observed condensation on packages and food temps were right at 41 degrees. Unit needs to be looked at by maintenance to see if it is in a state of failure and or calibration adjustment on thermostat. CFSM will keep temp log throughout day and bringing in bulk ice pans to place on bottom racks to circulate cold air as back up.
