Inspector notes: Observed raw seasoned chicken wings to be stored above raw steak and sour cream and other RTE foods to be stored next to raw shelled eggs in RIC underneath PTC in FFS area. Observed raw seasoned chicken wings to be stored above RTE food in RIC in back storage area. TCS foods shall be stored based on required minimum internal cooking temperatures to prevent cross contamination. Corrective Actions: EHS rearranged TCS food items so that cross contamination was prevented. PIC was educated on proper food storage order.
