Inspector notes: Observed several TCS foods (chicken wrap filling, chicken and cheese wraps) all prepared at 12pm day of inspection cooling with being tightly covered. Observed sautéed onions cooling while tightly covered at room temperatures. Reminded PIC of cooling methods. Went over Just Cool It poster observed in kitchen. Instructed to either uncover or slightly cover cooling foods. Inspector notes: Observed no thermometer in facility to test foods temperatures. CA: Food temperature measuring devices shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures as specified under DPH Rule 511-6-1-.04. A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
