14B - utensils, equipment and linens: properly stored, dried, handled (corrected on site)
Inspector notes: Observed serving dishes, throughout the food establishment, to be stored in an upright position with no protection from overhead contamination. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored: (i) In a self-draining position that allows air drying; and (ii) Covered or inverted. COS: PIC voluntarily placed all serving dishes in an inverted position to ensure that no overhead contamination can occur.
15B - warewashing facilities: installed, maintained, used; test strips
Inspector notes: Observed there to be no Chlorine test strips in the facility, as they are needed to test the concentration of the sanitizer buckets and ware-wash machine. (i) Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Pf. PIC will order test kits . Note: Inspector used his own test kits to measure the sanitizer concentration of the sanitizer during the inspection.
