Inspector notes: Observed a food employee wipe their nose with a paper towel and not wash their hands before returning to work. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and: After coughing, sneezing, using a handkerchief or disposable tissue, using tobacco products or electronic devices that simulate tobacco smoking, eating or drinking, except for drinking from a closed beverage container and the container is handled to prevent contamination of the hands. Corrective Actions: EHS immediately instructed food employee to wash their hands before touching any food or clean equipment.

Inspector notes: Observed plate surface chlorine sanitizer concentration to read below 50 ppm. A chlorine solution shall have a minimum concentration of 50 ppm. Corrective Actions: PIC instructed food employee to manually wash, rinse, and sanitize all equipment until a technician can service the dish machine.

Inspector notes: Observed 3 food containers with raw steak, yellow peppers, and whole onions to be stored on the floor in the WIC. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: In a clean, dry location; Where it is not exposed to splash, dust, or other contamination; and At least 6 inches (15 cm) above the floor. Corrective Actions: PIC began rearranging food in WIC to ensure all food was stored at least 6 inches above the floor.
