Inspector notes: Observed time/temperature control for safety (TCS) foods such as salsa being cold held above 41°F in black mini fridge (above Tropicana cooler). Also observed salsa and flan in Coke cooler in dining area being cold held above 41°F. Ambient temperatures of coolers were 51.8°F and 47.5°F, respectively. COS by discarding flan and moving salsas to different units as they were recently prepped. NOTE: Neither units are commercial/NSF certified as required. If minimum cold holding temperature cannot be maintained then units will have to be replaced OR not used for storage of TCS foods.
