Inspector notes: Observed raw shrimp and raw marinated chicken stored above shredded lettuce. CA: Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from: (I) Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables, and (III) Frozen, commercially processed and packaged raw animal food may be stored or displayed with or above frozen, commercially processed and packaged, ready-to-eat food. (II) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS: PIC voluntarily placed ready-to-eat foods above raw shrimp and chicken.

Inspector notes: Observed no chlorine test strips available to measure sanitizer concentration levels in three compartment sink. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Discussed with PIC to purchase chlorine test strip as soon as possible. In the meanwhile, EHS provided test strips to last for a few days.
