Inspector notes: Observed cut lettuce to be cooling in the walk-in cooler while being tightly/fully covered. Also observed hard boiled eggs, located in the reach-in (salad prep), to also be cooling while fully covered. Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Note: PIC voluntarily uncovered the containers of lettuce and uncovered/moved eggs, so that they may cool properly.
