Proper cooling methods used; adequate equipment for temperature control
Inspector notes: 1200-23-01-.03(5)(a)5. Cooling methods need to be improved. Do not cover and stack products that are actively cooling. Recommend smaller portions. Gound beef was found in the walk-in-cooler in a large covered metal container. Employee stated the ground beef was cooked at 7AM, put on ice, and it temped around 50 degrees by 9AM when they put it in the walk-in-cooler. Inspector found the ground beef at 53.7 degrees around 2PM. Ground beef was divided into several smaller pans to cooler quickly. Temperature dropped 5 degrees during this process. Chips dalsa was made from ambient temperature ingredients around 11AM. Inspector found three large buckets of chip salsa covered and stacked just inside of the door of the walk-in-cooler. Salsas temping at 67 degrees around 2 hours after prep.

Inspector notes: 1200-23-01-.03(5)(a)7. Various squirt bottles with varying degrees of red substances were found in the ice cream area without labels. Squirt bottles on the grill were found without labels. Anything taken out of its original container must have a label if it cannot be readily identified.

Inspector notes: 1200-23-01-.03(3)(b)1. Raw cut bacon stored in a container over ready to eat foods in the walk-in-cooler. PIC moved the bacon to be next to other raw products. Tortillas kept in a warmer wrapped in a damp cloth and inside of a grocery style plastic bag. Cloths or linens shall not be in contact with food during storage.

PIC explained that the knife is used to cut tortillas. Recomend using a metal knife that can be warewashed. PIC removed plastic knife from the cabbage. Reminder that these plastic utensils are not meant to be resued and should not be stored with the handle inside of product.
