Discussed proper cooling methods such as using containers that facilitate heat transfer for rapid cooling; Reducing volume by separating food into smaller or thinner portions by placing food in shallow pans less than 2 inches deep; Using rapid cooling equipment such as ice paddles or walk-in freezer; Stirring the food in a container placed in an ice water bath with the level ice to the food around the container; Loosely cover while cooling.
