Inspector notes: Observed improper cooling of temperature/time control for safety foods. Observed temperature/time control for safety foods placed into coolers in sealed large containers with tightfitting lids at ambient or high temperature. Discussed proper cooling methods such as using containers that facilitate heat transfer for rapid cooling; Reducing volume by separating food into smaller or thinner portions by placing food in shallow pans less than 2 inches deep; Using rapid cooling equipment such as ice paddles or walk-in freezer; Stirring the food in a container placed in an ice water bath with the level ice to the food around the container; Loosely cover while cooling. Corrected on-site by person in charge.

Inspector notes: Observed improper employee drinks, in kitchen area, in open beverage container/can, twist top bottles, and reusable tumblers. Discussed with PIC to have open employee drinks with a lid and straw. Corrected on-site by person in charge.
