Per interview with PIC cheese was placed in unit 1 hour prior to inspection. PIC relocated shredded cheese containers to walk-in cooler. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling.

Inspector notes: Mutiple cheeses (Asiago, Muenster, and shredded) on the cold hold prep top was observed held at 46-51 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Based on time cheeses place in prep unit, sliced cheeses were moved to colder refrigeration. Shredded cheese was voluntarily disposed of by PIC. Spoke with PIC about rearranging prep unit to move TCS items away from hot hold side of prep unit.
