Upon questioning of the Owner, inspector was made aware that the beef is repackaged in an Reduced Oxygen Packaging on site. A FOOD ESTABLISHMENT that PACKAGES TIME/TEMPERATURE CONTROL FOR SAFETY FOOD using a REDUCED OXYGEN PACKAGING method shall implement a HACCP PLAN. HACCP plan for Reduced Oxygen Packaged beef items is to be submitted to the RIDOH Center for Food Protection for review. HACCP Plan information supplied to PIC at the time of inspection.
