Inspector notes: Zeppole's were observed held at 46 degrees Fahrenheit in the front display cooler. The ambient temperature of the display unit was observed between 41-55 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per PIC, food was placed in cooler under 3 hours prior to inspection. Zeppoles moved to different refrigeration to rapidly cool.
