Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Lobster stored in the unit from previous day observed at 47 degrees Fahrenheit was voluntarily disposed of. Tomato and hamburgers stocked just prior to opening were moved to colder refrigeration. PIC to ensure food items are stored within the cold zone of the prep top unit to help maintain proper temperature control of the food items.
