Inspector notes: At the time of inspection, cheese and lobster were observed held at 47 and 61 degrees Fahrenheit respectively in the large Prep Unit. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per the PIC, the refrigeration unit was opened for cleaning for a while just prior to inspection. The cheese was moved to colder refrigeration and the lobster was disposed of by the PIC at the time of inspection.

Inspector notes: At the time of inspection, the large prep unit was observed to be maintaining an ambient temperature of 44 to 45 degrees Fahrenheit. Per the PIC, the unit was open for a while for cleaning just prior to inspection. Food items were removed at the time of inspection. Use of the unit is to be discontinued until recovery of the unit to 41 degrees Fahrenheit or below can be monitored and confirmed. Unit is to be serviced or repaired if unit cannot recover to a cold holding ambient temperature of 41 degrees Fahrenheit or below.
