PIC was able to repair machine and properly test at 50-100 PPM at the time if inspection.

Per interview of PIC, shredded corned beef was placed hot in the refrigerator in a covered container greater than four inches deep at 134 degrees Fahrenheit. Corned Beef was moved to shallow pan and placed in the freezer for rapid cooling at the time of inspection.
