Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. -Service was contacted. Establishment shall not store TCS foods in the bottom drawers of the saute station until the unit is able to consistently maintain an ambient temperature of 41 degrees Fahrenheit or below. Pasta, observed at 53 degrees Fahrenheit, were moved to a different cold hold unit as pasta was taken from the walk-in cooler less than 2 hours prior to to this inspection. Shrimp and salmon were observed at 46-48 degrees Fahrenheit and were voluntarily disposed of by staff.
