Per interview of PIC, Spaghetti was observed placed in individual covered plastic containers at 61 degrees Fahrenheit. Based on time of cooking and temperature observed, PIC moved spaghetti to the walk-in cooler and uncovered for rapid cooling at the time of inspection.
