Inspector notes: Raw animal foods (eggs) were observed stored above ready-to-eat foods in the refrigerator. Raw animal foods must be separated from raw ready-to-eat food such as vegetables during storage.

Inspector notes: No person certified in food safety was present as needed at the time of inspection.

Inspector notes: Allergy statement was lacking on the menu at the deli.

Inspector notes: Per interview of staff, slicers are only washed, rinsed, and sanitized at the end of the day. The surfaces of equipment that contacts time/temperature control for safety (TCS) foods such as meats and cheeses must be washed, rinsed, and sanitized at least every four hours. PIC sanitized slicer at time of inspection.

Inspector notes: Repacked deli salads were improperly date marked. Salads were marked with a day that exceeds 7 days. Once deli salad is repacked it must be dated within 7 days from that date. Per PIC deli salad was packaged 2 days ago. Deli salads to be redated.

Inspector notes: The hand-washing sink in the bathroom was lacking paper towels. Paper Towels made available at the time of inspection.

Inspector notes: Deli Salads repackaged in the establishment for sale from bulk packaging were observed not marked with the date of 7 days from the Opening Date of the original container. Deli items are to be marked with a use-by/expiration date not exceeding 7 days from the date of opening/repackaging.

Inspector notes: At the time of inspection, the outside dumpster was not covered. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered. Lids were closed at the time of inspection.
